As much as I like to read health and fitness articles, I’m always on the
lookout for food and cooking websites that offer new and exciting recipes to add to my
collection. Unfortunately, with three
small children and a full time job, I simply don’t
have enough time to get creative in the kitchen. So, I try to keep my cooking simple
with few ingredients and simple steps. A
lot of times I quickly prepare a dish, set the timer,
and throw it in the oven while I go about the
rest of my business. Sometimes I even
time it so that dinner will be done cooking just as I return from my run.
However, just because I keep it
simple most of the time doesn’t mean that I don’t dream big. I never miss an opportunity to print out recipes
that make my mouth water. In fact, I’ve been holding onto a great recipe for eggplant
parmesan for way too long. The recipe involves frying the
eggplant first, then breading it, and then baking it in
the oven. Right here and now I am
setting a goal to attempt this recipe by the end of the month. I know I can totally do it, if I just set
aside some time. Maybe my wife will even
join me for an in-house cooking date. I’ll
let you know how it turns out.
Do you shy away from recipes that seem too complicated?
