Whole Wheat Muffins

This is a great recipe my wife found in the “Joy of Cooking”.  She makes these every few days for the kids to munch on as a healthy snack when they come home from school. I also usually eat one when I arrive home of work.

This makes 12 muffins.

2/3 light whole wheat flour
1 1/3 cup of Whole Wheat flour
2 tsp of baking powder
1 egg
2 tblsp honey (we use date honey)
1 cup of milk (we use soy)
2 tsp canola oil
½ cup applesauce

Preheat oven to 400 F or 205C
Mix Dry and Liquid in separate bowls.
Combine and mix.
Fill muffin pans 2/3 full.
Bake 20 minutes
