Bean Dish

Below is a recipe for our bean dish.  We make this about once a week.  This is very easy and filling.  We usually serve with a side of pasta.


1 medium eggplant
3 zucchinis
1 red pepper
1 Can of Chickpeas
1 Can of Kidney Beans
Tomato Sauce

1.  Preheat the oven to 350
2.  Chop the vegetables into cubes
3.  Add beans
4.  Add Tomato sauce
5.  Mix
6.  Bake for 60 minutes
